Fresh banana cakes are a delicate situation. If just one slightly too ripe banana sneaks in, it feels like you are eating banana bread.
Our fresh banana cake starts with a buttery vanilla cake that relies on stiff egg whites for it's texture. Without even a hint of egg yolks to get in the way of the banana and caramel notes, the cake is light in color and very fluffy.
Folded in toffee bits add a complex caramelized sugar note. Topped with a vanilla mallow and finished with a dip in white chocolate and a caramel drizzle.
