Lemon desserts are a thing of wonder. Light, zesty, and they pair so well with everything from berries on top to a cup of iced-tea.
Lemons on the central coast are an all year affair. Markets have more than a few varieties, and many neighborhoods have lemon trees a plenty. I staked out the citrus guys at the Wednesday market for the Eureka lemons used here, full of true lemon flavor with sweet and sour notes.
Lemon Cake with Berry Cherry Compote
We started with a lemon cake that is buttery and soft, loaded with lemon zest for a bright lemony flavor. A dollop of raspberry cherry compote is added to each cake before baking. Topped with a fresh vanilla marshmallow and finished with a dip in white chocolate and sprinkled with wisps of raspberry scented sugar.
Pair with a cup of hot black coffee, or an iced-jasmine tea.
